Of course the result is sublime: true essence of cooking, mix of simplicity and genuine celebration of taste. Fulvio, "the fisherman", with his long white hair and his gruff appearance, almost portrait of the famous character sprung from the imagination of Hemingway, turning tirelessly in the restaurant among its customers, take care of them, dispenses smiles and cordiality, ironic jokes, and, when the artistic vein pervades it, plays his congas.
